3 cups Cooked Chicken Breast
2 medium Crisp Apples
2–3 Celery Stalks
1/2 cup Walnuts
1/2 cup Mayonnaise
1 tablespoon Dijon Mustard
1 tablespoon Lemon Juice
1/2 teaspoon Salt
1/4 teaspoon Black Pepper
2 tablespoons Fresh Parsley (optional)
Instructions
- Prepare your chicken by shredding or dicing it and placing it in a large mixing bowl
- Chop and add apples and celery to the bowl
- Toast walnuts if desired, then chop and add to the mixture
- In a separate bowl, whisk together mayonnaise, Dijon mustard, and lemon juice, season with salt and pepper
- Pour dressing over the salad mix and gently fold to combine
- Add parsley if using, chill for 30 minutes, then serve
