2 cups Cooked Chicken Breast, shredded or diced
½ cup BBQ Sauce
6–8 cups Romaine Lettuce, chopped
1 cup Cherry Tomatoes, halved
½ cup Corn, kernels
½ cup Black Beans, rinsed and drained
¼ cup Red Onion, thinly sliced or diced
½ cup Cheddar Cheese, shredded
¼ cup Crispy Fried Onions
½ cup Ranch Dressing
2 tbsp Fresh Cilantro, chopped
2 Lime Wedges
Instructions
- Prepare the Chicken: Combine cooked chicken with BBQ sauce in a bowl and toss to coat
- Chop the Greens: Wash and chop romaine lettuce and place it in a large serving bowl
- Prepare the Veggies: Halve cherry tomatoes, cut corn kernels from the cob, rinse black beans, and slice red onio
- Assemble the Base: Layer tomatoes, corn, black beans, and red onion over the lettuce
- Add the Chicken: Spoon BBQ chicken mixture over the salad
- Sprinkle the Cheese: Add shredded cheddar cheese on top
- Drizzle with Dressing: Pour ranch dressing over the salad
- Add Crispy Toppings: Scatter crispy fried onions on top
- Garnish and Serve: Garnish with cilantro and serve with lime wedges
