Ingredients
For the Tortellini:

1 (20 oz) package cheese tortellini

Salt (for boiling water)
For the Cheesesteak Mixture:

1 lb thinly sliced beef sirloin or shaved steak

1 tbsp olive oil

1 small onion, thinly sliced

1 green bell pepper, thinly sliced

1 red bell pepper, thinly sliced

2 cloves garlic, minced

Salt and pepper, to taste
For the Savory Provolone Sauce:

2 tbsp butter
-
2 tbsp all-purpose flour

1½ cups whole milk
-
1 cup shredded provolone cheese
-
½ cup shredded mozzarella (optional)

½ tsp Dijon mustard

Salt and black pepper, to taste
Instructions

Cook Tortellini: Boil tortellini per package directions, drain, and set aside.

Sauté Beef: In a skillet, cook steak in olive oil until browned. Set aside.

Sauté Veggies: In the same pan, sauté onion, peppers, and garlic until tender.

Make Sauce: In a separate saucepan, melt butter and whisk in flour. Gradually add milk and whisk until smooth. Stir in cheeses, Dijon, salt, and pepper.

Combine: Add beef, vegetables, and tortellini to the skillet. Pour in cheese sauce and stir until everything is coated and warmed through.

Serve: Garnish with parsley or extra provolone and serve hot.
Notes

Don’t overcook tortellini ,it will soften more in the sauce.

Add mushrooms for an umami twist.

Stir in cream cheese or heavy cream for added richness.
