A rich and creamy twist on a Philly classic ,this comforting pasta dish pairs tender shaved steak and sautéed peppers with cheese-filled tortellini in a luscious provolone sauce. Pure indulgence in under 40 minutes!

For the Tortellini:

  • 1 (20 oz) package cheese tortellini

  • Salt (for boiling water)

For the Cheesesteak Mixture:

  • 1 lb thinly sliced beef sirloin or shaved steak

  • 1 tbsp olive oil

  • 1 small onion, thinly sliced

  • 1 green bell pepper, thinly sliced

  • 1 red bell pepper, thinly sliced

  • 2 cloves garlic, minced

  • Salt and pepper, to taste

For the Savory Provolone Sauce:

  • 2 tbsp butter

  • 2 tbsp all-purpose flour

  • 1½ cups whole milk

  • 1 cup shredded provolone cheese

  • ½ cup shredded mozzarella (optional)

  • ½ tsp Dijon mustard

  • Salt and black pepper, to taste

Instructions

  • Cook Tortellini: Boil tortellini per package directions, drain, and set aside.

  • Sauté Beef: In a skillet, cook steak in olive oil until browned. Set aside.

  • Sauté Veggies: In the same pan, sauté onion, peppers, and garlic until tender.

  • Make Sauce: In a separate saucepan, melt butter and whisk in flour. Gradually add milk and whisk until smooth. Stir in cheeses, Dijon, salt, and pepper.

  • Combine: Add beef, vegetables, and tortellini to the skillet. Pour in cheese sauce and stir until everything is coated and warmed through.

 

  • Serve: Garnish with parsley or extra provolone and serve hot.

Notes

  • Don’t overcook tortellini ,it will soften more in the sauce.

  • Add mushrooms for an umami twist.

  • Stir in cream cheese or heavy cream for added richness.
