Ingredients
For the Pasta:
12 oz (340 g) spaghetti noodles
1 tbsp salt
1 tbsp oil
For the Sauce:
2 tbsp butter or oil
1 medium onion, chopped
3 cloves garlic, minced
1 lb (450 g) chicken breast, shredded or diced
1 can (14 oz / 400 g) tomato sauce
¼ cup tomato ketchup (Filipino-style or banana ketchup)
½ cup evaporated milk or all-purpose cream
1 tbsp sugar (adjust to taste)
½ cup grated quick-melt or cheddar cheese
½ tsp black pepper
Salt, to taste
Optional Add-ins:
3–4 sliced hotdogs
½ cup diced bell peppers
Extra cheese for topping
Instructions
1. Boil spaghetti in salted water until al dente. Drain, drizzle with oil, and set aside.
2. In a skillet, heat butter or oil. Add chicken and cook until lightly browned. Remove and set aside.
3. In the same pan, sauté onion and garlic until translucent.
4. Stir in tomato sauce, ketchup, and sugar. Simmer for 5 minutes.
5. Add evaporated milk or cream, cheese, and cooked chicken. Mix and simmer until sauce thickens.
6. Add spaghetti to the sauce. Toss gently until evenly coated.
7. Top with grated cheese and serve hot.
Notes
Use banana ketchup for authentic Filipino sweetness.
Add hotdogs for nostalgic flavor.
Adjust sugar to taste depending on ketchup used.
This dish is also great baked with extra cheese on top.
