  • 1 cup pineapple juice

  • ½ cup soy sauce

  • ⅓ cup brown sugar

  • ¼ cup ketchup

  • 2 tbsp rice vinegar

  • 1 tbsp sesame oil

  • 3 cloves garlic, minced

  • 1 tbsp fresh ginger, grated

  • ½ tsp chili flakes (optional)

  • Green onions and sesame seeds (for garnish)

Instructions

  • In a bowl, whisk pineapple juice, soy sauce, brown sugar, ketchup, vinegar, sesame oil, garlic, and ginger.

  • Pour marinade over chicken in a zip bag or bowl. Refrigerate at least 4 hours or overnight.

  • Preheat grill to medium-high. Grill chicken 5–7 minutes per side, basting with marinade.

  • Brush once more during final minute for a glossy glaze.
