Ingredients

2 cups All-purpose flour
1/2 cup Granulated sugar
1/4 teaspoon Salt
1 cup Unsalted butter, cold and cubed
2 cups Granulated sugar
1/4 cup All-purpose flour
4 Large eggs
2/3 cup Fresh lemon juice
2 tablespoons Lemon zest
As needed Powdered sugar (for dusting)

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper
  2. In a bowl, whisk together 2 cups flour, 1/2 cup sugar, and 1/4 teaspoon salt. Cut in 1 cup cold butter until mixture resembles coarse crumbs
  3. Press the mixture firmly into the bottom of the prepared pan and blind bake for 18-20 minutes
  4. In another bowl, whisk together 2 cups sugar and 1/4 cup flour until combined
  5. Add 4 eggs, 2/3 cup lemon juice, and 2 tablespoons lemon zest, whisking until smooth
  6. Pour the lemon filling over the hot crust and bake for an additional 20-25 minutes until the filling is set
  7. Cool completely at room temperature, then chill in the refrigerator for at least 2 hours before slicing
  8. Dust with powdered sugar before serving

Use fresh lemon juice and zest for the best flavor.
