1 lb Pasta
8 oz Burrata Cheese
2 large Lemons
3–4 cloves Garlic
¼ cup Good Quality Olive Oil
¼ cup packed Fresh Basil
¼ cup grated Parmesan Cheese
½ teaspoon Red Pepper Flakes
Salt to taste
Freshly Ground Black Pepper to taste
1–1½ cups Reserved Pasta Water
Instructions
- Cook the Pasta in a large pot of boiling salted water until al dente. Reserve 1½ cups of pasta water before draining
- In a large skillet, heat the olive oil over medium-low heat and sauté the minced garlic until fragrant
- Remove the skillet from heat, then stir in the lemon zest and juice from one lemo
- Drain the pasta and add it directly to the skillet with the lemon-garlic mixture
- Pour in ½ cup of reserved pasta water and toss vigorously to emulsify the sauce. Add more water as needed to reach desired consistency
- Season with salt and black pepper to taste, adjusting the lemon juice if needed
- Serve the pasta in bowls, tearing the burrata over each portion to let it melt into the pasta, and garnish with basil and Parmesa
