Ingredients

1 lb Pasta
8 oz Burrata Cheese
2 large Lemons
34 cloves Garlic
¼ cup Good Quality Olive Oil
¼ cup packed Fresh Basil
¼ cup grated Parmesan Cheese
½ teaspoon Red Pepper Flakes
Salt to taste
Freshly Ground Black Pepper to taste
1 cups Reserved Pasta Water

Instructions

  1. Cook the Pasta in a large pot of boiling salted water until al dente. Reserve 1½ cups of pasta water before draining
  2. In a large skillet, heat the olive oil over medium-low heat and sauté the minced garlic until fragrant
  3. Remove the skillet from heat, then stir in the lemon zest and juice from one lemo
  4. Drain the pasta and add it directly to the skillet with the lemon-garlic mixture
  5. Pour in ½ cup of reserved pasta water and toss vigorously to emulsify the sauce. Add more water as needed to reach desired consistency
  6. Season with salt and black pepper to taste, adjusting the lemon juice if needed
  7. Serve the pasta in bowls, tearing the burrata over each portion to let it melt into the pasta, and garnish with basil and Parmesa
