Instructions

Remove from heat and stir in oats, 1 cup coconut, and vanilla until fully combined. 3. Let mixture cool slightly, then roll into small 1-inch balls. 4. Roll each ball in extra coconut to coat completely. 5. Place snowballs on a parchment-lined tray and chill in fridge for 30 minutes before serving.
Notes
Use fine, fresh coconut for the best coating. Add a pinch of salt to balance sweetness. Try mixing in chopped nuts or dried fruit for variation.
