Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper
- Remove any loose or damaged outer leaves from the cabbage and slice it into thick 1 to 1.5-inch 'steaks'
- Drizzle olive oil over the cabbage steaks and season with salt, pepper, and any optional seasonings. Rub to coat evenly
- Roast in the oven for 20-25 minutes, flip the steaks, then roast for an additional 15-20 minutes until tender-crisp and golden brow
- Serve immediately with optional toppings like fresh parsley or lemon juice
