Ingredients
1 ¾ cups (220 g) all-purpose flour
2 tsp baking powder
½ tsp baking soda
½ tsp salt
¼ cup (60 g) cold butter, cubed
1 cup (240 g) mashed sweet potatoes (about 1 medium)
2–3 tbsp cold milk (as needed)
1 tbsp honey or brown sugar (optional for sweetness)
Instructions
1. Boil or bake the sweet potato until tender. Mash until smooth and let cool.
2. In a bowl, mix flour, baking powder, baking soda, and salt.
3. Cut in cold butter using a pastry cutter or fingertips until crumbly.
4. Stir in mashed sweet potatoes and honey. Gradually add cold milk until a soft dough forms.
5. Gently pat dough to ¾-inch thickness. Cut into biscuits using a cutter.
6. Place biscuits on a parchment-lined baking sheet. Bake at 425°F (220°C) for 12–15 minutes.
7. Serve warm with butter, honey, or cinnamon butter.
Notes
Use cold butter and don’t overwork the dough for flakier biscuits.
Roasting the sweet potato enhances flavor.
Brush tops with honey butter after baking for extra richness.
Chill dough before baking for taller, fluffier biscuits.
