1 pound Spaghetti
1/2 cup Unsalted Butter
3–4 cloves Garlic, minced
2 cups Heavy Cream
1 ½ cups Freshly Grated Parmigiano-Reggiano Cheese
Salt to taste
Freshly Ground Black Pepper to taste
Fresh Parsley, chopped (optional)
Instructions
- Gather all your ingredients before you begin; this makes the cooking process smoother
- Get a large pot of salted water boiling for the spaghetti
- Cook spaghetti until al dente, according to package directions. Reserve about 1.5 cups of the starchy pasta water before draining
- Melt butter in a large skillet over medium heat without letting it brow
- Sauté minced garlic in melted butter for 30 seconds to 1 minute until fragrant
- Pour in heavy cream and bring to a gentle simmer, stirring constantly. Reduce heat to low
- Gradually add grated Parmigiano-Reggiano cheese, whisking until smooth and slightly thickened
- Season the sauce with salt and pepper to taste
- Add drained spaghetti to the sauce and toss well to coat
- Adjust the sauce consistency with reserved pasta water as needed
- Serve immediately, garnished with extra cheese and parsley if desired
Notes
Use freshly grated cheese for best results.
