8 ounces Feta Cheese
4 ounces Cream Cheese
2 tablespoons Olive Oil
1 cup Fresh Strawberries
1–2 tablespoons Honey
1–2 tablespoons Fresh Basil or Mint
Pinch Black Pepper
Instructions
- Drain any liquid from the block of feta cheese and crumble it into a food processor
- Add the softened cream cheese and olive oil to the food processor
- Process on high speed until the mixture is completely smooth and creamy, about 2-3 minutes
- Taste and season with a pinch of freshly ground black pepper
- Wash and hull the strawberries, then slice or quarter them
- Spread the whipped feta mixture onto a serving dish
- Top with the sliced strawberries and drizzle with honey
- Garnish with finely chopped basil or mint, and serve immediately
Notes
Using block feta packed in brine will yield better results than pre-crumbled feta.
