Ingredients
1 cup Fresh or frozen corn kernels
1/2 cup All-purpose flour
1 cup Shredded cheese (cheddar or mozzarella)
1 tsp Baking powder
2 large Eggs
1/4 cup Green onions, chopped
1/2 tsp Salt
1/4 tsp Pepper
Olive oil (or vegetable oil) for frying
Instructions
- In a large bowl, combine the corn, flour, shredded cheese, baking powder, and chopped green onions. Mix these dry ingredients together until well combined
- In another bowl, beat the eggs and season with salt and pepper. Add the egg mixture to the corn mixture, stirring until just combined
- Heat olive oil in a large skillet over medium heat. You want just enough oil to coat the bottom of the pa
- Once the oil is hot, drop tablespoons of the batter into the skillet, flattening them slightly with the back of a spatula
- Cook each fritter for about 3-4 minutes on one side, until golden brown, before flipping and cooking the other side for another 3-4 minutes
- Transfer the cooked fritters to a paper towel-lined plate to absorb excess oil. Repeat the process with the remaining batter
- Serve your Cheesy Corn Fritters warm, and enjoy!
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days.
To reheat, warm them in a skillet or in the oven at 350°F for about 10-15 minutes.
