Ingredients

1 cup Fresh or frozen corn kernels
1/2 cup All-purpose flour
1 cup Shredded cheese (cheddar or mozzarella)
1 tsp Baking powder
2 large Eggs
1/4 cup Green onions, chopped
1/2 tsp Salt
1/4 tsp Pepper
Olive oil (or vegetable oil) for frying

Instructions

  1. In a large bowl, combine the corn, flour, shredded cheese, baking powder, and chopped green onions. Mix these dry ingredients together until well combined
  2. In another bowl, beat the eggs and season with salt and pepper. Add the egg mixture to the corn mixture, stirring until just combined
  3. Heat olive oil in a large skillet over medium heat. You want just enough oil to coat the bottom of the pa
  4. Once the oil is hot, drop tablespoons of the batter into the skillet, flattening them slightly with the back of a spatula
  5. Cook each fritter for about 3-4 minutes on one side, until golden brown, before flipping and cooking the other side for another 3-4 minutes
  6. Transfer the cooked fritters to a paper towel-lined plate to absorb excess oil. Repeat the process with the remaining batter
  7. Serve your Cheesy Corn Fritters warm, and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days.

To reheat, warm them in a skillet or in the oven at 350°F for about 10-15 minutes.
