4 Large Russet Potatoes
4 tablespoons Butter
1 cup Shredded Cheddar Cheese
1/4 cup Chopped Fresh Chives
1 teaspoon Salt
1/2 teaspoon Black Pepper
1/2 cup Sour Cream

Instructions

  1. Preheat your oven to 400°F (200°C)
  2. Wash and scrub the Russet potatoes thoroughly. Pat them dry with a kitchen towel
  3. Prick each potato with a fork several times. This allows steam to escape during baking
  4. Rub each potato with butter and sprinkle with salt and black pepper
  5. Place the potatoes directly on the oven rack or on a baking sheet for easier cleanup
  6. Bake the potatoes for about 45-60 minutes, or until they are tender
  7. Once finished, remove the potatoes from the oven and let them cool for a few minutes
  8. Carefully slice each potato lengthwise and fluff the insides with a fork
  9. Add the shredded cheddar cheese, chopped chives, butter, and sour cream to each potato. Mix gently to combine
  10. Serve warm, garnished with additional chives and cheese if desired

Select potatoes that are similar in size for even cooking.
