Ingredients
3 cups Hash browns (frozen or freshly grated)
4 ounces Prosciutto, diced
6 large Eggs
1 cup Milk
1 cup Shredded cheese (cheddar or Gruyère)
1 cup Spinach, chopped (optional)
1 teaspoon Salt
½ teaspoon Pepper
2 tablespoons Olive oil or butter
Instructions
- Preheat your oven to 425°F (220°C)
- In a large bowl, mix the hash browns with olive oil or melted butter, salt, and pepper. Press mixture firmly into the bottom and up the sides of a greased 9-inch pie dish
- Bake for about 20 minutes or until golden brown, then remove from the oven and set aside to cool slightly
- In a mixing bowl, whisk together the eggs and milk until well combined. Stir in diced prosciutto, cheese, and spinach (if using), then season with additional salt and pepper to taste
- Pour the egg mixture into the baked hash brown crust, spreading it evenly
- Return the quiche to the oven and bake for an additional 25-30 minutes until the center is set and the top is lightly golde
- Allow the quiche to cool for a few minutes before slicing and serve warm or at room temperature

Squeeze out excess moisture from fresh hash browns for extra crispiness.
Grate your cheese fresh for better melting properties.
