1/2 cup Unsalted butter, softened
2 large Eggs
1/2 cup Milk
1 teaspoon Vanilla extract
1 cup Heavy cream (for filling)
Powdered sugar to taste (for dusting)
Instructions
- Preheat your oven to 350°F (175°C)
- In a large bowl, whisk together flour, sugar, and salt
- In another bowl, cream together the softened butter, eggs, milk, and vanilla extract until smooth
- Gradually add the wet ingredients to the dry ingredients, mixing until well combined
- Using a cookie scoop, drop rounded tablespoons of dough onto a baking sheet lined with parchment paper, leaving space between each scoop
- Bake in the preheated oven for about 15-20 minutes or until golden brown. Allow them to cool on a wire rack
- In a mixing bowl, whip the heavy cream until soft peaks form. You can sweeten it with a little powdered sugar if desired
- Once the baked pastries cool, cut them in half and fill them with whipped cream, then replace the top
- Dust the tops with powdered sugar before serving

Ensure your butter, eggs, and milk are at room temperature for better mixing.
Mix the batter just until combined to maintain a light and fluffy texture.
