2 lbs Potatoes
1/2 cup Fresh Lemon Juice
1/4 cup Olive Oil
4 cloves Garlic
1 tablespoon Dried Oregano
1/2 cup Chicken or Vegetable Broth
1 teaspoon Salt
1/2 teaspoon Black Pepper
2 tablespoons Fresh Parsley (optional)
Instructions
- Preheat oven to 400°F (200°C)
- Wash, peel, and cut potatoes into 1.5 to 2-inch chunks
- Mince garlic cloves finely
- In a bowl, mix lemon juice, olive oil, garlic, oregano, salt, and pepper
- Toss the potatoes in the lemon-garlic mixture until coated
- Spread potatoes on a baking sheet in a single layer
- Roast for 30 minutes, then flip potatoes and add broth
- Continue roasting for another 25-30 minutes until golden and crispy
- Garnish with chopped parsley before serving

Use fresh lemons for the best flavor.
