Ingredients

1 lb Ground beef
1 Medium onion, diced
2 Garlic cloves, minced
2 Carrots, diced
2 Celery stalks, diced
1 14.5 oz can Diced tomatoes
4 cups Beef broth
1 tbsp Italian seasoning
To taste Salt and pepper
1 cup Pasta (small shells or elbows)
¼ cup Fresh parsley, chopped
2 tbsp Olive oil

Instructions

  1. In a large pot, heat 2 tbsp olive oil over medium-high heat. Add the diced onion and sauté until translucent, about 3-4 minutes
  2. Then, add minced garlic and ground beef. Cook until the beef browns, breaking it apart with a spoo
  3. Stir in diced carrots and celery. Cook for another 5 minutes, allowing the veggies to softe
  4. Pour in the canned tomatoes (with juice) and beef broth. Season with Italian seasoning, salt, and pepper. Bring the soup to a boil
  5. Once boiling, add the pasta and reduce heat to a simmer. Cook until the pasta is al dente, usually about 8-10 minutes
  6. Stir in the chopped parsley. Adjust seasoning as needed. Serve hot and enjoy!

Notes

Don’t Overcook the Pasta: Cooking it al dente ensures your pasta won’t become mushy once it sits in the soup.

Flavor Boost: For an extra depth of flavor, add a splash of red wine after browning the meat and let it simmer for a minute before adding the broth.

Prep Ahead: To save time, prep your vegetables a day ahead so you can throw everything together quickly.
