2 large Eggs
1 cup Breadcrumbs (Italian or Panko)

Instructions

  1. Rinse the calamari rings under cold water and pat them dry with paper towels
  2. In a bowl, whisk together the flour, cornstarch, salt, pepper, garlic powder, and onion powder
  3. In another bowl, beat the eggs until well combined
  4. Spread the breadcrumbs onto a plate or shallow dish
  5. Dip each calamari ring into the flour mixture, then into the egg, and finally coat it with the breadcrumbs. Repeat until all are coated
  6. In a large skillet, heat about 1/2 inch of olive oil over medium heat. Test if it's hot enough by dropping a breadcrumb in; it should sizzle
  7. Add the calamari in batches, being careful not to crowd the pan. Fry for about 2-3 minutes per side or until golden brow
  8. Remove the fried calamari and place them on a paper towel-lined plate to soak up excess oil. Serve hot with lemon wedges and your favorite dipping sauce
