1 1/2 cups Fresh cranberries
1/2 cup Walnuts (optional), chopped
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper
- In a large mixing bowl, combine the flour, granulated sugar, baking powder, baking soda, and salt. Whisk to combine thoroughly
- In another bowl, whisk the eggs, oil, orange juice, and orange zest until well blended
- Pour the wet mixture into the dry ingredients, stirring just until combined. Avoid overmixing to keep the bread tender
- Gently fold in the cranberries and walnuts (if using), ensuring an even distributio
- Pour the batter into the prepared loaf pan and smooth the top with a spatula
- Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clea
- Once done, remove the bread from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely before slicing
Notes
Consider tossing cranberries in a little sugar if they are too tart.
Start checking for doneness at the 60-minute mark, as baking times may vary.
