Ingredients

1 tbsp Olive Oil
1 lb Smoked Sausage
1 medium Yellow Onio
34 cloves Garlic
1 (14.5 oz) can Canned Diced Tomatoes
4 cups Chicken Broth
12 oz Short Pasta
1 tsp Italian Seasoning
½ tsp Salt
¼ tsp Black Pepper
½ cup Heavy Cream
2 cups Fresh Spinach
¼ cup Parmesan Cheese

Instructions

  1. Brown the Smoked Sausage in heated Olive Oil for 5-7 minutes
  2. Sauté the Yellow Onion for 3-5 minutes, then add the minced Garlic and cook for another minute
  3. Pour in the Canned Diced Tomatoes and Chicken Broth, then add the uncooked Short Pasta, Italian Seasoning, Salt, and Black Pepper
  4. Bring to a boil, then reduce to a simmer for 12-15 minutes until the pasta is al dente
  5. Stir in Heavy Cream and Fresh Spinach, then return the cooked Smoked Sausage to the pot and mix in the Parmesan Cheese

Notes

For a lighter dish, consider substituting Heavy Cream with half-and-half or plant-based milk.
