Ingredients
1 tbsp Olive Oil
1 lb Smoked Sausage
1 medium Yellow Onio
3–4 cloves Garlic
1 (14.5 oz) can Canned Diced Tomatoes
4 cups Chicken Broth
12 oz Short Pasta
1 tsp Italian Seasoning
½ tsp Salt
¼ tsp Black Pepper
½ cup Heavy Cream
2 cups Fresh Spinach
¼ cup Parmesan Cheese
Instructions
- Brown the Smoked Sausage in heated Olive Oil for 5-7 minutes
- Sauté the Yellow Onion for 3-5 minutes, then add the minced Garlic and cook for another minute
- Pour in the Canned Diced Tomatoes and Chicken Broth, then add the uncooked Short Pasta, Italian Seasoning, Salt, and Black Pepper
- Bring to a boil, then reduce to a simmer for 12-15 minutes until the pasta is al dente
- Stir in Heavy Cream and Fresh Spinach, then return the cooked Smoked Sausage to the pot and mix in the Parmesan Cheese
Notes
For a lighter dish, consider substituting Heavy Cream with half-and-half or plant-based milk.
