2 cups Fresh peaches, peeled and diced
1/2 cup Granulated sugar
1 tablespoon Lemon juice
1 teaspoon Cinnamo
2 (9-inch) Pre-made pie crusts
1 Egg, beaten (for egg wash)
All-purpose flour (for dusting) as needed
Instructions
- Prepare the filling by combining diced peaches, granulated sugar, lemon juice, and cinnamon in a medium bowl. Let sit for about 10 minutes
- Preheat your oven to 425°F (220°C)
- Roll out the pre-made pie crusts on a lightly floured surface, and cut out 4-5 inch circles from the dough
- Place about 2 tablespoons of the peach filling in the center of each dough circle, avoiding overfilling
- Fold the dough over the filling to create a half-moon shape. Seal the edges by pressing with fingers and crimping with a fork
- Brush the tops of the hand pies with the beaten egg for a golden finish
- Bake in the preheated oven for 20-25 minutes until golden brown and puffed
- Allow to cool before serving. Enjoy warm or at room temperature
