Instructions
- Prepare the Watermelon by cutting it into 1-inch cubes and placing in a large mixing bowl
- Slice the Peaches in half, remove the pit, and cut into bite-sized wedges or cubes, then add to the bowl
- Chop the Fresh Mint and add it to the bowl with the fruit
- Crumble the Feta Cheese over the fruit mixture
- In a small bowl, whisk together the Lime Juice, Honey, Extra Virgin Olive Oil, and a pinch of Salt to make the dressing
- Pour the dressing over the fruit and toss gently to combine
- Serve immediately for the best flavor and texture
