Ingredients

1 lb Ground beef
1 medium Onion, chopped
1 small Green bell pepper, chopped
2 cloves Garlic, minced
1 cup Shredded cheese (provolone or cheddar)
1012 pieces Egg roll wrappers
Olive oil for frying
Salt and pepper to taste

Instructions

  1. In a large skillet over medium heat, brown the ground beef, breaking it apart into fine pieces as it cooks
  2. Once the beef is browned, drain excess fat, then add chopped onions, green bell pepper, and minced garlic. Sauté until the vegetables are soft, about 5 minutes
  3. Stir in the shredded cheese until it melts and combines with the meat and vegetables. Season with salt and pepper to taste
  4. Lay out an egg roll wrapper in a diamond shape and place about 2 tablespoons of the filling in the center
  5. Fold the bottom corner over the filling, then fold in the sides, and roll tightly to seal. Use a dab of water on the edges to help seal the wrappers
  6. Heat about 2 inches of olive oil in a deep skillet or frying pan over medium heat until hot
  7. Carefully fry a few egg rolls at a time until golden brown, about 3-4 minutes on each side. Remove and drain on paper towels
  8. Let them cool slightly before serving

Notes

Don't overstuff the egg rolls to prevent bursting during frying.

Ensure the oil is hot enough by testing with a small piece of wrapper.
