1 lb Fresh Asparagus
1 lb Carrots
2–3 tablespoons Olive Oil
1 teaspoon Garlic Powder
½ – 1 teaspoon Salt
½ teaspoon Black Pepper
Instructions
- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper
- Wash the asparagus and snap off the woody ends. Wash and peel the carrots, cutting them into sticks
- Place the asparagus and carrot sticks in a bowl. Drizzle olive oil and sprinkle garlic powder, salt, and black pepper. Toss to coat evenly
- Spread the vegetables in a single layer on the baking sheet, ensuring not to overcrowd them
- Roast in the oven for 20-25 minutes, tossing halfway through for even roasting
- Serve immediately, optionally drizzling with fresh lemon juice
Notes
Use extra virgin olive oil for best flavor.
Feel free to mix in other vegetables like bell peppers or zucchini for variety.
