Ingredients

1 pound Sausage (breakfast or Italian)
1 can (10 oz) Rotel diced tomatoes with green chilies
8 oz Cream cheese (softened)
1 cup Shredded cheddar cheese
1 cup Almond flour (or regular flour)
1/4 cup Green onions (chopped)
1 tsp Garlic powder
1/2 tsp Salt
1/4 tsp Pepper

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup
  2. In a large mixing bowl, combine the softened cream cheese and sausage. Use your hands or a fork to thoroughly mix until fully combined
  3. Add the drained Rotel tomatoes, shredded cheddar cheese, almond flour, chopped green onions, garlic powder, salt, and pepper to the bowl. Mix well until all ingredients are incorporated
  4. With your hands, form small balls (about 1 inch in diameter) and place them on the prepared baking sheet
  5. Bake in the preheated oven for 20-25 minutes or until they are golden brown and cooked through
  6. Remove from the oven and let them cool slightly before serving. Enjoy while warm!

Notes

Make sure your cream cheese is at room temperature for easier mixing.

Don't skip draining the Rotel or your sausage balls might turn out too wet.

Feel free to prepare the mixture a day ahead and store it in the fridge.
