1.5 lbs Smoked Sausage

1 large Yellow Onio
2 large Bell Peppers
3 tablespoons Olive Oil
1 teaspoon Garlic Powder
1 teaspoon Smoked Paprika
0.5 teaspoon Dried Oregano
1 teaspoon Salt
0.5 teaspoon Black Pepper
2 tablespoons Fresh Parsley
Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup. If using a large oven-safe skillet, ensure it's well-oiled
- Slice the smoked sausage into ½-inch thick rounds. Dice the potatoes into 1-inch cubes, keeping them uniform in size for even cooking. Chop the yellow onion into large chunks and slice the bell peppers into strips or 1-inch pieces
- In a very large bowl, combine the sliced sausage, diced potatoes, chopped onion, and bell peppers. Drizzle everything with olive oil. Sprinkle in the garlic powder, smoked paprika, dried oregano, salt, and black pepper. Toss vigorously until all ingredients are thoroughly coated
- Carefully spread the seasoned mixture onto the prepared baking sheet in a single layer. Do not overcrowd the pan; use two baking sheets if necessary to ensure proper roasting and crisping
- Place the baking sheet in the preheated oven. Roast for 25-30 minutes, then remove the pan and stir everything with a spatula. Return to the oven and continue roasting for another 15-20 minutes, or until the potatoes are tender and golden brown, and the sausage has crispy edges
- Once cooked, remove the baking sheet from the oven. If desired, sprinkle fresh chopped parsley over the top for garnish. Serve immediately while hot

Don't overcrowd the pan; use two baking sheets if needed to ensure roasting instead of steaming.
