35 cookies Golden Oreo
½ cup Unsalted Butter, melted
16 oz Cream Cheese, full-fat, softened
½ cup Granulated Sugar
1 teaspoon Vanilla Extract
1 cup Heavy Cream, cold
1 cup Freeze-Dried Strawberries, crushed

Instructions

  1. Prepare a 9×13 inch baking pan by lining it with parchment paper and lightly greasing it
  2. Crush 30 Golden Oreo cookies into fine crumbs
  3. Mix crushed cookies with melted butter and press into the bottom of the prepared pan to form the crust
  4. Chill the crust in the refrigerator while preparing the filling
  5. Crush the freeze-dried strawberries and set aside
  6. Beat the softened cream cheese until smooth and creamy
  7. Add granulated sugar and vanilla to the cream cheese and mix until just combined
  8. Whip the heavy cream until stiff peaks form
  9. Fold the whipped cream into the cream cheese mixture gently
  10. Fold in ¾ of the crushed freeze-dried strawberries
  11. Pour cheesecake filling over the crust and smooth the top
  12. Sprinkle reserved cookie crumbs and crushed strawberries on top
  13. Cover and refrigerate for at least 4-6 hours, preferably overnight
  14. Cut into squares and serve

Notes

Use full-fat cream cheese for best results.

Allow ample chilling time for the cheesecake to set properly.
