Ingredients
35 cookies Golden Oreo
½ cup Unsalted Butter, melted
16 oz Cream Cheese, full-fat, softened
½ cup Granulated Sugar
1 teaspoon Vanilla Extract
1 cup Heavy Cream, cold
1 cup Freeze-Dried Strawberries, crushed
Instructions
- Prepare a 9×13 inch baking pan by lining it with parchment paper and lightly greasing it
- Crush 30 Golden Oreo cookies into fine crumbs
- Mix crushed cookies with melted butter and press into the bottom of the prepared pan to form the crust
- Chill the crust in the refrigerator while preparing the filling
- Crush the freeze-dried strawberries and set aside
- Beat the softened cream cheese until smooth and creamy
- Add granulated sugar and vanilla to the cream cheese and mix until just combined
- Whip the heavy cream until stiff peaks form
- Fold the whipped cream into the cream cheese mixture gently
- Fold in ¾ of the crushed freeze-dried strawberries
- Pour cheesecake filling over the crust and smooth the top
- Sprinkle reserved cookie crumbs and crushed strawberries on top
- Cover and refrigerate for at least 4-6 hours, preferably overnight
- Cut into squares and serve
Notes
Use full-fat cream cheese for best results.
Allow ample chilling time for the cheesecake to set properly.
