Ingredients

4 cups Cor
2 large English Cucumbers
1/4 cup Red Onio
1/2 cup Fresh Cilantro
1 small Jalapeño
1/2 cup Mayonnaise
1/4 cup Sour Cream
2 tablespoons Lime Juice
1 teaspoon Chili Powder
1/2 teaspoon Smoked Paprika
1/2 teaspoon Garlic Powder
1/4 cup Cotija Cheese
Salt to taste
Black Pepper to taste

Instructions

  1. Prepare the corn and char it in a skillet until slightly browned. Let cool
  2. Chop the cucumbers, onion, jalapeño, and cilantro
  3. In a bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, smoked paprika, garlic powder, salt, and pepper
  4. Combine cooled corn, cucumbers, onion, jalapeño, and cilantro in a large bowl
  5. Dress the salad with the creamy mixture and toss well
  6. Add Cotija cheese and chill for at least 30 minutes before serving

Notes

For best flavor, use fresh charred corn.

Allow flavors to meld by chilling the salad before serving.
