Ingredients
4 cups Cor
2 large English Cucumbers
1/4 cup Red Onio
1/2 cup Fresh Cilantro
1 small Jalapeño
1/2 cup Mayonnaise
1/4 cup Sour Cream
2 tablespoons Lime Juice
1 teaspoon Chili Powder
1/2 teaspoon Smoked Paprika
1/2 teaspoon Garlic Powder
1/4 cup Cotija Cheese
Salt to taste
Black Pepper to taste
Instructions
- Prepare the corn and char it in a skillet until slightly browned. Let cool
- Chop the cucumbers, onion, jalapeño, and cilantro
- In a bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, smoked paprika, garlic powder, salt, and pepper
- Combine cooled corn, cucumbers, onion, jalapeño, and cilantro in a large bowl
- Dress the salad with the creamy mixture and toss well
- Add Cotija cheese and chill for at least 30 minutes before serving
Notes
For best flavor, use fresh charred corn.
Allow flavors to meld by chilling the salad before serving.
