2 Eggs

1/4 teaspoon Pepper
1/4 cup Butter (melted)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin with cooking spray or butter
  2. In a large bowl, combine the prepared mashed potatoes, shredded cheese, chopped bacon, and green onions. Stir in the eggs, melted butter, flour, baking powder, salt, and pepper until everything blends smoothly
  3. Spoon the mixture into the muffin tin, filling each cup about 2/3 full
  4. Place the muffin tin in the preheated oven and bake for 25-30 minutes or until the tops are golden and a toothpick inserted in the center comes out clea
  5. Allow the muffins to cool for a few minutes in the tin before transferring them to a wire rack. Serve warm and enjoy!
