Ingredients
3 cups Mashed potatoes (prepared)
1 cup Shredded cheese (cheddar or your choice)
1/2 cup Cooked bacon (chopped)
1/4 cup Green onions (sliced)
2 Eggs
1/2 cup Flour
1 teaspoon Baking powder
1/2 teaspoon Salt
1/4 teaspoon Pepper
1/4 cup Butter (melted)
Instructions
- Preheat your oven to 375°F (190°C) and grease a muffin tin with cooking spray or butter
- In a large bowl, combine the prepared mashed potatoes, shredded cheese, chopped bacon, and green onions. Stir in the eggs, melted butter, flour, baking powder, salt, and pepper until everything blends smoothly
- Spoon the mixture into the muffin tin, filling each cup about 2/3 full
- Place the muffin tin in the preheated oven and bake for 25-30 minutes or until the tops are golden and a toothpick inserted in the center comes out clea
- Allow the muffins to cool for a few minutes in the tin before transferring them to a wire rack. Serve warm and enjoy!
Notes
Use leftover mashed potatoes for a quick meal solution; they taste just as good!
Don’t overmix the batter; gentle folding keeps your muffins light and fluffy.
